Ingredients:
Potatoes – 2 (boiled & cubed)
Onion – 1 (sliced)
Tomato – 1 (chopped)
Green chilies – 2
Ginger garlic paste – 1 tsp
Turmeric – ¼ tsp
Red chili powder – ½ tsp
Coriander powder – 1 tsp
Salt – to taste
Mustard seeds – ½ tsp
Curry leaves – few
Oil – 1 tbsp
Water – ½ cup
Method:
- Heat oil, splutter mustard seeds and curry leaves.
- Add onions, chilies, and sauté till golden.
- Add ginger garlic paste and sauté.
- Add tomatoes, turmeric, chili, coriander powder, and cook till soft.
- Add potatoes, salt, water; simmer 5–7 mins. Serve hot.
🍅 Tomato Kurma
Ingredients:
Ripe tomatoes – 4
Onion – 1 (sliced)
Green chilies – 2
Ginger garlic paste – 1 tsp
Grated coconut – ¼ cup
Fennel seeds – ½ tsp
Cashews – 5
Garam masala – ½ tsp
Salt – to taste
Oil – 1 tbsp
Curry leaves – few
Method:
- Grind coconut, fennel, and cashews to a smooth paste.
- Sauté onions, green chilies, curry leaves in oil.
- Add ginger garlic paste, tomatoes, salt. Cook till soft.
- Add ground paste, garam masala, water (½ cup), simmer.
- Serve warm with chapathi.
🧅 Onion Raita
Ingredients:
Curd – 1 cup (whisked)
Onion – 1 (finely chopped)
Green chili – 1 (chopped)
Salt – to taste
Coriander leaves – chopped
Method:
- Mix curd, onions, green chili, and salt.
- Garnish with coriander leaves.
- Chill and serve with warm chapathis or parathas.
🥬 Palak Paneer
Ingredients:
Spinach – 2 cups (blanched)
Paneer – 200g (cubed)
Onion – 1
Tomato – 1
Green chili – 1
Ginger garlic paste – 1 tsp
Garam masala – ½ tsp
Cumin – ½ tsp
Cream – 1 tbsp (optional)
Salt – to taste
Oil – 1 tbsp
Method:
- Blend blanched spinach, tomato, chili to a puree.
- Sauté cumin, onion, and ginger garlic paste in oil.
- Add puree, salt, garam masala. Simmer.
- Add paneer, finish with cream. Serve hot.
🍲 Mixed Vegetable Sabzi
Ingredients:
Carrot, beans, peas, potato – 1 cup (chopped)
Onion – 1
Tomato – 1
Ginger garlic paste – 1 tsp
Turmeric – ¼ tsp
Chili powder – ½ tsp
Garam masala – ½ tsp
Salt – to taste
Oil – 1 tbsp
Water – ½ cup
Method:
- Heat oil, sauté onion, ginger garlic paste.
- Add tomatoes, spices, and chopped veggies.
- Add water, cover and cook till soft.
- Stir in garam masala. Serve dry or semi-gravy.
