🥘 Vegetable Kurma

Ingredients:

  • Mixed vegetables – 1 cup (carrot, beans, potato, peas)

  • Onion – 1, chopped

  • Tomato – 1, chopped

  • Ginger-garlic paste – 1 tsp

  • Coconut – ¼ cup

  • Poppy seeds – 1 tsp

  • Cashews – 5

  • Fennel seeds – ½ tsp

  • Spices: turmeric, garam masala, coriander powder, salt

Method:

  1. Grind coconut, poppy seeds, cashews, and fennel into a smooth paste.
  2. Sauté onions, tomatoes, and ginger-garlic paste. Add spices.
  3. Add veggies and water; cook until soft.
  4. Add the ground paste and simmer. Serve hot!

🍗 Chicken Chettinad Curry

Ingredients:

  • Chicken – 500 g

  • Onion – 2, sliced

  • Tomato – 1, chopped

  • Ginger-garlic paste – 1 tbsp

  • Chettinad masala (coriander, cumin, fennel, pepper, cloves, cinnamon – roasted & ground)

  • Coconut milk – ½ cup

  • Salt, turmeric, chili powder

Method:

  1. Sauté onions and ginger-garlic paste until golden.
  2. Add tomato, spices, and chicken. Mix well.
  3. Add water and cook until chicken is tender.
  4. Stir in coconut milk; simmer for 5 mins. Serve with parotta!

🍳 Egg Curry

Ingredients:

  • Boiled eggs – 4

  • Onion – 1, chopped

  • Tomato – 1, chopped

  • Ginger-garlic paste – 1 tsp

  • Curry leaves

  • Turmeric, chili powder, coriander powder, garam masala

Method:

  1. Sauté onion, tomato, and ginger-garlic paste.
  2. Add spices and cook well.
  3. Add boiled eggs and curry leaves. Simmer for 10 mins.
  4. Serve hot with crispy parottas.

🍲 Dal Fry

Ingredients:

  • Toor dal – ½ cup

  • Onion – 1, chopped

  • Tomato – 1, chopped

  • Ginger-garlic – 1 tsp

  • Green chilies – 2

  • Cumin, mustard, turmeric, red chili powder, garam masala

Method:

  1. Cook dal until soft.
  2. Sauté onion, tomato, ginger-garlic paste with spices.

🥒 Raita

Ingredients:
